White Chicken Chili

What you’ll need: 

4 cups chopped chicken  (we smoked a whole chicken, but can use rotisserie as well) 
We used meat church blanco and hickory seasoning to rub chicken for smoking 
1 large diced onion 
3 cans great northern beans 
32 oz chicken broth 
1 can rotel diced tomatoes and green chilies 
1 block pepper jack cheese 
2 tsp cumin 
2 tbs chili seasoning 
Garnish: shredded cheese & sour cream (optional)

How to make White Chicken Chili:

  1. Pull chicken combining white and dark meat then chop 

  2. Mix all ingredients in a Dutch oven (pot will work too) 

  3. Place on smoker (or stove top) 

  4. For a minimum of 4 hours at 225 (medium heat) stirring regularly

  5. Serve with shredded cheese of your choice, sour cream and/or cilantro (optional)

We served with oyster crackers but corn bread is good too!
