Steak Tacos
What you’ll need:
Steak of your choice (or could do another protein)
2 tbs lime juice
4 tbs olive oil
1/2 tsp cumin
1/2 tsp chili powder
1/2 tsp paprika
1/2 tsp garlic
3/4 tsp salt
1/2 tsp black pepper
Fajita seasoning (I used meat church)
Onion - I mixed white and red
1.5 tbs minced garlic
Flour tortillas
1 avocado
Toppings: cilantro/salsa/queso fresco
How to make Easy Steak Tacos:
Start with the marinade - mix 2 tbs lime juice, 2 tbs olive oil, cumin, chili powder, paprika, garlic powder, salt and pepper
Place steak in shallow dish or resealable bag and pour marinade over the meat, flip and coat well
Refrigerate for at least 30 minutes and up to 4 hours for better flavor (no longer)
Cook steak on grill or in cast iron seasoning lightly with fajita seasoning. Grill 5 min per side or to desired temp. (I went to 135 degrees internal)
Remove steak and let rest for 10 minutes
Heat oil in cast iron over medium heat and sauté garlic and onions until slightly caramelized
Warm tortillas in dry skillet for 30 secs per side
Slice steak against the grain into thin strips
Place steak on each tortilla and dress to your liking with cooked onions, avacado, cilantro, queso fresco!
