Chicken Caesar Pasta Salad
What you’ll need:
FOR THE DRESSING
3/4 cup Mayo
2 teaspoons Dijon Mustard
2 tablespoons fresh lemon juice
2 teaspoons Worcestershire sauce
2 teaspoons minced garlic
1/3 cup finely grated Parmesan cheese
1 teaspoon anchovy paste (optional) - we excluded this
FOR THE PASTA SALAD
8 oz pasta (rotini or penne)
2 hearts of Romaine
Chopped Chicken (I smoked chicken breasts but could easily grab a rotisserie chicken for a weeknight quick meal)
shredded parmesan for serving
croutons (I made homemade)
HOMEMADE CROUTONS (optional)
french bread cut into pieces
1/4 stick butter melted
2 - 3 teaspoons olive oil
onion powder
garlic powder
salt and pepper
Italian seasoning
Toss all ingredients in bowl and place on baking sheet - 375 for 15 minutes, flipping half way.
How to make Chicken Caesar Pasta Salad:
Boil pasta then cool
Lightly toss chilled pasta in small amount of dressing with parm
Cut romaine into 1 inch pieces
Toss the salad and pasta on prepared dressing
Add chicken, croutons, bacon and shredded parm.
